Kimchi Udon

Extra saucy kimchi udon noodles that are packed with all the best tangy and savory flavors, topped off with an egg. All the best ingredients and noodles ready in under 20 minutes!

Ingredients

  • Udon noodles: I love this recipe specifically with udon noodles because they’re so chewy and bouncy. If you can’t find udon, any fresh and chewy type of Asian-style noodle should work!
  • Butter: The butter really helps make the sauce taste creamier. You can omit and use a neutral flavored oil instead but I highly suggest using the butter!
  • Kimchi: Definitely a necessity for this recipe. I like using the oldest kimchi I have in my fridge so it has the most tangy taste.
  • Gochujang and gochugaru: Depending on your desired spice level and how spicy your gochujang (Korean chili paste) is, the gochugaru (Korean red chili pepper flakes) is definitely optional! I like adding it because I like everything super spicy.
  • Oyster sauce: This also helps create more flavor depth. Feel free to use soy sauce or soy sauce paste if you don’t have oyster sauce.
  • Sugar: A little sugar helps to balance out the tanginess of the kimchi juice.
  • Sesame oil: Helps add a nutty flavor to the sauce.
  • Spam: Spam or bacon would be great in this recipe. I usually always add Spam since my husband wants it in anything and everything.
  • Shiitake mushrooms: I love the flavor of shiitake mushrooms in this udon stir fry, but any vegetables you have on hand would be great. Can also omit this entirely to simplify the recipe.
  • Eggs: A pan fried egg with a gooey yolk, a poached egg, or an egg yolk on top really help add creaminess to the dish. And honestly, you really can’t go wrong topping kimchi dishes with an egg.
  • Green onions and sesame seeds: I love all the garnishes! Crushed up seaweed strips would be great too.

Directions

Any packaged udon noodles will work for this recipe (fresh, dried, frozen). Just make sure to cook them according to the package instructions as cook time can vary a lot.

These are the frozen udon noodles I always keep stocked in my freezer. They’re super chewy and cook in ~1 minute!

Once you start boiling water, I usually start making the sauce so everything is ready to mix together as soon as the udon noodles are done cooking. If the noodles are done cooking way before the sauce is ready, I will immediately dunk them into an ice bath so they stop cooking. This will prevent mushy noodles. 

For the kimchi, I usually pack 1 cup with kimchi as tight as I can, then pour in some kimchi juice. Just enough juice that when you press down on the kimchi napa cabbage, the juice pushes to the top of the measuring cup.

I remove the cabbage from the liquid and put them on a cutting board to chop up.

Pour the kimchi liquid into the bowl you will be using to mix your sauce. Also add in the gochujang, gochugaru, oyster sauce, sugar, and sesame oil.

Roughly chop your kimchi to small bite-size pieces.

Saute the kimchi, mushrooms, and Spam (if using) with the melted butter until the Spam starts browning or kimchi starts cooking through.

Then, add in your sauce mixture and cook for ~3 minutes.

Once the udon noodles are cooked, throw them into the skillet and mix until all the noodles are coated evenly.

Top with eggs (cooked to your preference), green onions, and sesame seeds. Serve immediately!

 1 tbsp gochujang
 1 tsp gochugaru
 2 tsp oyster sauce
 1 tsp sugar
 1 tsp sesame oil
 2 tbsp unsalted butter
 6 oz (1/2 container) of Spam, cut into strips
 6 shiitake mushrooms, thinly sliced
 2 eggs
 sesame seeds, for garnish
 green onions, for garnish

Boil a pot of water and cook udon noodles according to package instructions. Pay attention to the cooking time! Frozen udon noodles cook very quickly.

Prepare your eggs however you prefer. Pan fried, poached, or just the egg yolk would taste amazing!

While you are waiting for the water for the udon noodles to boil, start making the sauce so you can add the cooked udon noodles in right away. In a bowl, add in the kimchi juice, gochujang, gochugaru, oyster sauce, sugar, and sesame oil and stir to combine.

In a large skillet, heat the butter on medium heat. Once the butter is all melted, add in the chopped kimchi, shiitake mushrooms, and Spam. Cook until the Spam is starting to brown (~3 minutes). Then, add in the sauce and cook until sauce starts to slightly thicken (~3 minutes).

Add in the cooked udon noodles and stir to combine. Top with your eggs, green onions, and sesame seeds. Serve immediately.
